Is there a better combination with French food than French wine? An American steak with a California Cabernet? This is the stuff dreams are made of!
Most of us also know pairing an Italian Chianti with a pizza is a classic combination as well. But when we crack open sparkling wine to pair with pizza, eyes seem to glaze over.
Never fear! White pizza to the rescue! Build your favorite pie, leave off the tomato sauce, & you can end up with a wonderful pairing with Italian sparkling wine. Here’s what I paired with my 2000 Altemasi Riserva Graal Brut:
I blended ricotta cheese, fresh grated Parmesan cheese, a small amount of good olive oil & my favorite Italian spices to taste. I squeezed in the juice of a fresh lemon & a few red pepper flakes & smeared all that over my Boboli crust for a thin base. I heaped on sliced mozzarella cheese & a few thin slices of salami & popped it in the oven.
